Not much of an intro today before I get to the recipe, sorry. I’m being lazy I guess or simply not in the mood to write. Not inspired, as some would say, maybe not being myself lately. It’s a kinda conflict of emotions trying to break loose from their usual state of confinement that possibly have left me in this present confused state. My mind is a jumble of thoughts, a kaleidoscope of memories, a maze of questions that seem to be merging into each other with no definite answers..
ORANGE CRANBERRY MUFFINS
Ingredients:
1 1/4 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
100 g butter or margarine
1/2 cup caster sugar
1 egg, room temperature
1 tsp vanilla extract
5 tbs full cream milk
1 tbs freshly grated orange zest
100 g dried cranberries
Method:
- Preheat oven to 210 oC. Line a 12-hole muffin pan with paper cups.
- Soak cranberries in warm water for about 15 minutes. Drain well.
- Cut margarine into flour and rub in till mixture resembles breadcrumbs.
- Add sugar, cranberries and orange zest, followed by the lightly beaten egg.
- Gradually add milk till the mixture is of a slow dropping consistency.
- Spoon batter into prepaped muffin pan sa that each cup is 3/4 full.
- Bake at 210 oC for 20-30 minutes until golden brown.
- Cool completely on a wire rack. Makes 12 regular muffins.
