Kick start the year with these deliciously refreshing fruit pops from La Receta de la Felicidad! Make your fruit purées well in advance, assemble the ice pops a couple of days ahead and unmould right before dessert time for a spectacular and calorie-free finish to a lavish New Year lunch or dinner. WATERMELON ICE POPS
Ingredients:
For the Watermelon Layer
350 g watermelon, cubed and unseeded
50 g white caster sugar
Juice of 1/2 lemon
1/4 cup mini chocolate chips
For the Lemon Layer
Juice of 1/2 lemon
150 ml water, very cold
2 heaped tablespoons sugar
For the Kiwifruit Layer
1 kiwifruit, peeled
50 ml water, very cold
2 tablespoons sugar
Method:
- In a blender combine watermelon, lemon juice and sugar. Pour in 9 disposable cups (about 3 oz capacity).
- Freeze until puree is slightly slushy for 2 to 3 hours. Place a twig or stick on every ice pop and freeze again.
- Prepare lemon layer just by combining all ingredients. Pour a thin lemon layer over the watermelon layer.
- Freeze mixture again for at least 4 hours. Prepare kiwifruit layer by blending all the ingredients together.
- Pour kiwifruit mixture evenly over lemon layer in cups. Freeze for at least 4 hours or till completely solid.
- Cut disposable cups to unmold and serve immediately over a bed of ice cubes. Yields 9 watermelon pops.
