Need a quick chocolate fix? Don’t despair. This delicious microwave marvel, from Table for Two, is guaranteed to satisfy your urgent need for chocolate in no less than 5 minutes. Stir everything in a large microwave-safe mug and set the timer depending on how fudgy you want your cake. Throw in some mini chocolate chips or chunks of good quality dark chocolate or toasted almond flakes or shredded coconut or candied cherries or a dash of peppermint extract or a sprinkling of cinnamon… you can try something new every time you think of making mug cake! Now do not blame me if you cannot stop yourself from having chocolate cake every night. I know it’s pretty hard to resist.
CHOCOLATE MUG CAKE
1/4 cup all purpose flour
2 tablespoons cocoa powder
1/4 teaspoon baking powder
2 tablespoons caster sugar
1/8 teaspoon kitchen salt
1/4 cup + 1 tablespoon milk
2 tablespoons vegetable oil
2 tablespoons Nutella
- Combine all the dry ingredients together in a bowl. Add milk and oil and whisk well until smooth.
- Pour batter into two 200ml microwave-safe mugs. Drop the Nutella right in the middle of each mug.
- Microwave each cake on high for 1-2 minutes depending on the power of your microwave oven.
- Carefully remove the hot cake from the microwave and cool slightly before serving with ice cream.
