With each day turning colder and shorter than the one before, I fervently wish for winter to come to an end. Since my wish cannot be granted right away, I resigned myself to comfort food and regular doses of homemade hot chocolate to keep warm and happy. This glorious calorie-packed muffin recipe, from BBC’s Good Food Bakes & Cakes, has enough chocolate to make you forget that we are nowhere close to summer.

85g unsalted butter, melted

250g all purpose flour

25g cocoa powder

2 teaspoons baking powder

1/2 teaspoon baking soda

85g dark chocolate, chopped

85g white chocolate, chopped

100g milk chocolate, chopped

2 eggs, room temperature

280ml unsweetened yogurt

85g light muscovado sugar

  • Preheat oven to 200oC. Brush eleven holes of a muffin tin with melted butter or line with paper cups.

  • In a large bowl, combine flour, cocoa powder, baking powder, baking soda, and the chopped chocolate.

  • In a separate bowl, mix eggs, yogurt, sugar and melted butter. Add the wet mixture to dry ingredients.

  • Stir it until just combined but do not over mix. Spoon batter into prepared muffin tin to about 2/3 full.

  • Bake for 20 minutes until well risen. Leave in muffin tin for about 15 minutes, remove and serve warm.
