To start the new year on a healthy note, along with some serious health-conscious resolutions to make more informed food choices and to favour homemade as far as possible, I share with you this amazingly easy granola. With its blend of nutritious unprocessed ingredients, it makes a very satisfying meal for breakfast, served with low fat Greek yogurt and organic dark chocolate. I scaled down the recipe from Yummy Healthy Easy to make 2.5 cups, which is to be stored in an air-tight container and might well last over a week even if you plan to eat granola daily as your morning intake of carbs and nutrients. HEALTHY HOMEMADE GRANOLA
Ingredients:
1 1/2 cups old fashioned oats
1/2 cup sliced raw almonds
1/4 cup shredded coconut
1/4 cup roasted sunflower seeds
1 1/2 teaspoon flaxseed
1 1/2 teaspoon wheat germ
1/8 cup coconut oil, melted
1/4 cup honey or maple syrup
Greek yogurt, to serve
Raspberries and strawberries
Chopped dark chocolate
Method:
- Mix first 6 ingredients in a large mixing bowl. Melt coconut oil in the microwave for about 30 seconds.
- Add the honey to coconut oil and combine. Pour this over oat mixture and stir to coat everything well.
- Spread into an even layer on a cookie sheet and bake granola at 325 degrees for about 15-16 minutes.
- Stir it gently and let bake for another 10 to 15 minutes, until golden brown. Leave the granola to cool.
- Store in an airtight container. When ready to assemble, place the yogurt in bottom of serving glasses.
- Add a layer of granola over the yogurt, then top with chopped dark chocolate and whole fresh berries.
