This October, Nestlé is running a 21-Day Breakfast Challenge to promote their products as well as to encourage people to invest more time and effort in making breakfast part of their morning routine. Nestlé products should feature in the selfies posted on their Facebook album. Though I am not into this selfie madness, I was fueled by the excitement of a new challenge and decided to tackle it in my own way: To bake the 21 breakfast recipes in the Nestle recipe book and post one recipe per day on my blog.

Day 16 called for a banana breakfast bowl but since I have a strong aversion to raw bananas, I replace them with fresh mango, which are coming in season somewhat earlier than I expected. The slightly high price tag on my favorite fruit will probably come down once the local market gets flooded with local produce and the mango harvest this year has been predicted to be a rather ‘fruitful’ one. Along with chunks of fresh mango, a touch of coconut milk brings this healthy breakfast bowl close to a pina colada inspired dessert.

Day 16 MANGO & COCONUT FITNESS BOWL

Ingredients:

30g Nestle Fitness Cereals

1/2 cup coconut milk

1/2 cup plain yogurt

1/2 fresh mango, sliced

2 teaspoons toasted coconut

Method:

  • Pour coconut milk in a breakfast bowl. Add Nestle Fitness cereals and plain yogurt.

  • Top with mango slices and toasted coconut flakes and serve immediately. Serves 1.
