Warm, gooey and chocolatey, this calorie-laden pudding will be sure to warm you right to your toes. Taken right from my favorite Australian’s Women Weekly, every spoonful of this rich dessert will release spurts of endorphins that will lift you to a happiness level you might not have experienced before. And for those who hate doing dishes, you will probably find yourself licking the bowl clean!
CLASSIC CHOCOLATE SELF SAUCING PUDDING
Ingredients:
1 cup (150g) self-raising flour
¼ cup (25g) cocoa powder
½ cup (110g) firmly packed brown sugar
½ cup (125ml) milk
1 egg, room temperature
60g butter, melted and cooled
Cream or vanilla ice cream, to serve
For the Sauce
1/3 cup (35g) cocoa powder
½ cup (110g) firmly packed brown sugar
1¾ cups (430ml) boiling water
Method:
- Preheat oven to 180°C. Grease a 1.5L ovenproof dish and place on an oven tray lined with baking paper or foil.
- Sift the flour and cocoa powder into a medium bowl. Add the sugar and stir to break up any lumps.
- Whisk together the milk, egg and butter in a jug. Add the milk mixture to the dry ingredients.
- Use a whisk to stir to a smooth batter. Pour into the prepared dish and smooth the surface with the back of a spoon.
- Sift the cocoa powder into a bowl; add the sugar and stir to combine. Sprinkle evenly over the surface of the batter.
- Pour boiling water evenly over cocoa-sugar mixture in the dish. Bake for 50 minutes or until cake topping is firm.
- Dust with extra cocoa powder if desired. Serve warm with cream or vanilla ice cream. Makes 6 servings.
